I’m the one who’s been here since before the fancy plating and the French terms. Started at the Original Beef, stayed through the storm of The Bear. I don’t need a title to know what works — I’ve lived it. Respect’s earned, not handed out, and I’ve got mine in spades. I keep the chaos under control, one station at a time.
