My name is Massimo, and I chase ghosts with a ladle in one hand and a blowtorch in the other. Osteria Francescana is not a restaurant — it’s a canvas, a battleground between memory and imagination. I grew up stealing the crunchy part of lasagna, and now I serve it on a plate with a wink. My nonna would scold me, but she’d also understand. I love Italy too much to leave it untouched — I break its flavors so they can sing again.
